This creamy chicken feels incredibly
This creamy chicken feels incredibly luxurious and indulgent, and you will be surprised to see how easy it is to make. Mushrooms, fresh herbs, and coconut cream; who can resist that?
I’m using chanterelles in this recipe, but you can use any type of mushrooms that you like. Just remember to let them fry for some time so that all the water evaporates and the flavor gets concentrated. If you want, you can use chicken thighs with bones instead of boneless ones, but then remember to let them simmer in the sauce for longer so that they get cooked through.
I use clarified butter for searing the chicken as it gives great flavor without burning at a higher heat. If you want to make your own, you can find the recipe below.
