Fried Aloo🥔 2 lbs of
Fried Aloo
🥔 2 lbs of potatoes (peeled and sliced thinly)
🥑3 tbsps of avocado oil
🧅1 medium onion
🧄10-15 cloves of garlic
🌶2 tbsps of minced pepper (hot & pimento)
🌿2 tbsps of bandhania/culantro/chadon beni/recao
🧂Salt (I used 1.5 tsp)
1. Wash & peel potatoes.
2. Slice thinly on a board, by hand, or using a mandolin.
3. Soak in cold water for 30 minutes.
4. Prep ingredients. Slice onion, and mince garlic & peppers.
5. Add avocado oil to a well-seasoned cast iron skillet on medium heat, and add onions. Let it saute for a minute.
6. Add 1/2 of the garlic, pepper & bandhania and reserve the rest.
7. Add potatoes/aloo, mix well and cover.
8. Cook covered for 5 minutes, then let the condensed liquid on the lid drop back into the pan to help loosen the stuck potatoes. Turn the potatoes gently with a spatula.
8. Repeat 3-4 times until the potatoes are cooked how you like. I like the crispy bun-bun /burnt pieces (fond).
9. Add the reserved garlic, pepper, bandhania & salt. Adding the salt last allows the potatoes to get nice and crispy. Salt slows down the browning (Maillard reaction).
10. Enjoy with sada roti!
