Easy healthy pumpkin bread recipe! This video will show you how to make healthy pumpkin bread with no sugar or vegetable oil! Pumpkin is after all a squash, so technically pumpkin bread is a vegetable bread. Most recipes negate the health favor by turning pumpkin bread into basically pumpkin cake. They add sugar, highly processed oil and white flour, rendering this potentially healthy snack a dessert! Only sweetened with 1/2 cup of honey, this recipe is a healthy version you can eat and share with you family with no reservations! Ingredients: 2 TBS coconut oil melted and cooled 1/2 cup honey 1 large egg (room temp) 1/3 cup plain Greek yogurt (room temp) 1 tsp vanilla extract 1 & 1/2 cup pumpkin purée 1 tsp baking soda 1 & 1/2 tsp cinnamon 1/4 tsp ground nutmeg 1/4 tsp ground cloves 1/4 tsp kosher salt 1 & 1/2 cup whole wheat flour Directions: Preheat oven to 325 degrees and grease a 8x4 loaf pan with cooking spray. Whisk together wet ingredients until well combined and then whisk in spices, baking soda and salt. Stir in flour gently and pour batter into prepared loaf pan. Bake for 55-65 minutes until toothpick comes out clean or with only a few moist crumbs. Allow to cool for a few minutes in pan and then turn out onto cooling rack. Enjoy this bread warm or chilled with butter or cream cheese!
