In this episode of Banana Eats, he visits Daniele Bendanti, the chef of Oltre in Bologna, Italy, to learn about the Cotoletta alla Bolognese. Different from its Milanese cousin, this Bolognese veal cutlet is covered in prosciutto, or cured ham and Grana Padano before being finished in a savory stock.
