Full recipe of champaran Mutton :
INGREDIENTS -
For Garam masala :
Coriander seeds - 1 tbsp
Cumin seeds - 1 tbsp
Fennel seeds - 1 tbsp
Black pepper - 1 tbsp
Cloves - 1 tbsp
Green cardamoms - (15-20)
Black cardamom - (5-6)
Cinnamon roll - (7-8) inch
Red chillies - (6-7)
Mace leaves - (3-4)
Fox nuts - (6-8)
Bay leaves - (3-4)
Poppy seeds - 1 tbsp
Add some salt and grind them all and make a fine powder.
For marination
Mutton - 1 kg
Coriander powder - 2 tbsp
Whole spices garam masala - 1.5 tbsp
Turmeric powder - 1/2 tbsp
Red chilli powder - 1/2 tbsp
Kashmiri red chilli powder - 1 tbsp
Roasted cumin powder - 1/2 tbsp
Ginger garlic paste - 1.5 tbsp
Salt to taste
Chopped green chillies - (4-5)
Some chopped coriander leaves
Melted ghee - 2 tbsp
Onions - 4 medium
Mix them all well
Now season the handi with 2 tbsp melted ghee
Put marinated mutton into the hand and add 4-5 red chillies and 2 whole garlic cloves
Now carefully seal the lid with the help of dough and let it cook for 90 mins on low flame
Garnish with chopped coriander leaves and enjoy the recipe
