Tabrizi meatballs are a traditional dish with a history spanning hundreds of years. As the name suggests, this dish originates from the city of Tabriz. However, it is prepared with various ingredients in different cities.
Ingredients for 4 people:
• 2 onions
• 1 cup dried beans
• 1 cup rice
• 3 tablespoons tomato paste
• 3 eggs
• 3 tablespoons fried onions
• 1 tablespoon saffron
• 500 grams minced meat
• 1 to 2 tablespoons chickpea flour
• 5 tablespoons herbs for meatballs (mint, tarragon, basil, coriander, and parsley)
• Apricots and walnuts as desired (optional)
• Salt, pepper, turmeric, and paprika to taste, and a bit of cumin
Instructions:
• Grate the onions and mix them with dried beans and rice in a suitable bowl.
• Add tomato paste, eggs, fried onions, saffron, and minced meat to the mixture and mix everything well.
• Add chickpea flour and chopped herbs or meatball seasoning to the mixture and mix again.
• If desired, add apricots and walnuts, and mix all the ingredients again.
• Add salt, pepper, turmeric, paprika, and cumin to the mixture and mix again until all the ingredients are evenly combined.
• Let the mixture rest in the refrigerator for at least 2 hours, then shape it into pear-shaped meatballs.
• Fry the meatballs in hot oil until they are golden brown and cooked on both sides.
Tip:
If you're looking for a specific taste, you can add extra ingredients according to your personal preference and adjust the seasonings.
Serve your "Koofte Tabrizi" meatballs with bread and enjoy the extraordinary flavor!
