This is my favourite classic chewy macaroon recipe! Follow along with our easy step-by-step recipe video and learn how to make macaroons! These easy coconut cookies have a wonderful texture, slightly toasted on the outside with a chewy tender center. The best part of this classic macaroon recipe is that it requires only 6 ingredients, and takes less than 30 minutes to make! These macaroons will keep for 1 week in the fridge but I promise you that these simple coconut cookies won’t last that long!
This classic chewy macaroon recipe makes twelve 3/4 tablespoon sized cookies. It can easily be doubled or tripled if needed!

Ingredients:
1 +1/3 cup shredded sweetened coconut
2 tablespoons white sugar (use an additional 3 tablespoons if using unsweetened coconut)
2 tablespoons all purpose flour
1/4 teaspoon fine sea salt
1/2 teaspoon pure vanilla extract
2 large room temperature egg whites
Directions:
Preheat your oven to 325°F/160°C. In a medium bowl combine coconut, white sugar, flour, salt, vanilla and egg whites. Using a large wooden spoon or a sturdy spatula mix until everything is combined and is uniform both in colour and texture. Line a cookie sheet with parchment paper. Using a 3/4 tablespoon cookie scoop drop your macaroons onto your prepared pan. If you do not have a 3/4 tablespoon cookie scoop just drop them by the rounded heaping teaspoon. Bake for 15-18 minutes and allow to cool on the pan for a few minutes before moving to a rack to finish cooling.
