Apple Cake / Apple Crumble Cake

For this Apple Crumble Cake have made a simple crust, then piled the apples in for a apple overload.  This great apple cake will go great with scoop of vanilla ice cream.

Apple filling:
1200g diced apples 1inch thick (Gala and Granny Smith)
2 tbsp sugar
2 tbsp lemon juice
1 tbsp unsalted  butter
1 tsp vanilla
1-1/2tbsp corn starch
1/4 cup cold water

Crust:
270g unsalted  butter at room temperature
100g sugar
3 egg yolks
1 tsp vanilla
450g flour
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
Bake at 375F for 10 minutes, reduce the heat to 350F bake 35 min
