Deep Madeleine Pan 77(L)X 50(D) X 22(H)

89g Cake flour
44g Almond power
4g Baking powder
97g Sugar
110g Egg
11g Egg Yolk
11g Honey
13g fresh cream
120g Butter

1. Sift the soft flour, almond powder, and baking powder
2. Add sugar and mix
3. Add room temperature egg and yolk and stir to mix well.
4. Add honey and fresh cream and mix with a whisk.
5. Divide the butter melted at 45~50℃ 2-3 times and mix.
6. Wrap it with rice and let it ripen in the refrigerator for 30 minutes to 1 hour.
7. Melt the butter in the Madeleine mold and spread it evenly.
8. Stir the dough once with a spatula to mix
9. Knead the dough about 90% in the mold (about 40g)
10. For reference, the pan I used is a deep madeleine pan 77(L)X 50(D) X 22(H).
11. Bake in an oven preheated to 170℃ for 15~16 minutes
Depending on the type of oven, the temperature and time may vary slightly.
