Musallam Raan is a famous recipe prepared as a whole dish and made to be served to the royal people. This dish is taken from the Awadh kingdom. The Nawabs of Awadh belonged to a dynasty of Persian origin from Nishapur, Iran.

Awadhi cuisine hails from the city of Nawabs, Lucknow. Nawabs of Awadh were inhabitants of Persia (modern day Iran) and initially were deputies of the Mughal Emperors, though later independent kings ruling the kingdom of Awadh.

Nawabs were used to a particular diet which comprised grains, fruits, dry fruits and vegetables that were available in that country, apart from meat in various forms. The Mughlai style of cooking was further refined by the Nawabs by adding exotic flavours of saffron and dry fruits and innovating coking styles with lots of inputs from Persian way of cooking. Dum cooking and cooking on slow fire was an art that was perfected in Lucknow and then there was extensive use of scents from flowers and plants that was quite a unique feature hear.

The Musallam (Chicken / Mutton) is a typical example of Persian flavours merged with the Awadhi style of cooking.

Ingredients:-

1. Full Meat Raan (रान मुस्सल्लम) - 1.2 Kgs
2. Ghee / Clarified Butter (ghee) - 125 gm
3. Curd (दही) - 80 gm
4. Ginger Garlic Paste (जिंजर-गार्लिक पेस्ट) - 2 tbsp
5. Kewda Water (केवड़ा) - 2 tbsp
6. Salt (नमक) - 2 tbsp
7. Onion (प्याज) - Cut and fried - 5
8. Papaya (पपीता) - 3 tbsp
9. Kashmiri Chilli (कश्मीरी मिर्च) - 1.5 tbsp - used only for giving colour
10. Cashew (काजू ) and Almond (बादाम) Paste - 10 each
11. Elaichi Powder (इलायची पाउडर ) - 1/2 tbsp
12. Black Pepper (काली मिर्च) - 1/2 tbsp
13. Garam Masala (गरम मसाला ) - 1/2 tbsp
14. Coriander Powder (धनिया पाउडर) - 1.5 tbsp
15. Red Chilli Powder (लाल मिर्च का पाउडर) - 2 tbsp
