烤盤28✖️28釐米
麵團:
70克✖️12個
高筋麵粉430克
(或中筋麵粉440克)
牛奶230克(室溫30~37°C)
雞蛋2個(留10克刷表面)
酵母 6克
鹽5克
白糖65克
無鹽黃油60克
烤箱預熱15分鐘後
烘烤180°C
24分鐘
🔺Tips:
雞蛋帶殼每個60克左右,2個雞蛋蛋液100克,留10克刷表面,實際蛋液用量90克左右。
牛奶室溫30~37攝氏度,和手溫差不多。如果冰箱冷藏牛奶,可以微波爐加熱30秒左右。

Preheat oven 15 minutes in advance
185°C (or 365 °F)

🔺Tips:
Eggs with shells are about 60 grams each, 2 eggs have 100 grams of egg liquid, and 10 grams are left to brush the surface. The actual amount of egg liquid is about 90 grams.
The room temperature of milk is 30-37 degrees Celsius, which is about the temperature of hands. If the milk is cold in the refrigerator, it can be heated in the microwave for about 30 seconds.
