Ashak is a popular Afghan dish consisting of dumplings filled with leeks or scallions, topped with tomato or meat sauce and yogurt. Here's a basic recipe for making Ashak:

Ingredients:
For the dumplings (Ashak):
2 cups all-purpose flour
2 cups finely chopped leeks or scallions
1 teaspoon salt
Water (as needed)

For the meat sauce: (optional)
1 lb ground beef or lamb
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon ground turmeric
1 teaspoon ground coriander
Salt and pepper to taste
Olive oil or vegetable oil for frying

For serving:
Plain yogurt
Dried mint (optional)

Instructions:
Making the dumplings (Ashak):
In a mixing bowl, combine the flour and salt. Gradually add water and knead until you have a smooth dough. Cover the dough with a damp cloth and let it rest for about 30 minutes.

While the dough is resting, prepare the filling. Mix the chopped leeks or scallions with a pinch of salt and set aside.

Divide the dough into small balls, about the size of a walnut. Roll out each ball into a thin circle, about 3 inches in diameter.

Place a spoonful of the leek or scallion mixture in the center of each circle. Fold the dough over the filling to form a half-moon shape. Press the edges firmly to seal.

Bring a large pot of salted water to a boil. Drop the dumplings into the boiling water and cook for about 5-7 minutes, or until they float to the surface. Remove with a slotted spoon and drain well.

Making the meat sauce:
In a large skillet, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant.

Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a spoon as it cooks.

Stir in the tomato paste, turmeric, ground coriander, salt, and pepper. Cook for another few minutes until the meat is cooked through and the flavors are well combined. Remove from heat.

Serving:
To serve, place the cooked dumplings on a serving platter. Spoon the meat sauce over the dumplings.

Serve with a dollop of plain yogurt on top and a sprinkle of dried mint, if desired.
