Strawberry Rhubarb Pie | Small Batch | Two Small Pies

This delicious pie is the perfect combination of sweet strawberries and tart rhubarb.  We're using a flaky crust and topping it with a streusel topping!

Note:  Lately I have been draining some of the juices from the fruit before I add it to the pie crust, the pie in the video is a little runny, it does set up as the pie cools.

Ingredients:
1 pie crust . Use this recipe for homemade: https://www.yourhomebasedmom.com/perf...
1 Tbsp tapioca
1 cup rhubarb, diced
2 cups strawberries, diced
1/2 cup plus 2 Tbsp sugar
1/2 tsp lemon juice
1/8 tsp nutmeg
1 1/2 Tbsp cornstarch
1 Tbsp water
Streusel Topping:
1/4 cup flour
1/4 cup brown sugar
1/4 cup old fashioned oats
2 Tbsp butter.

Directions:
Preheat oven to 375 degrees F.
Place pie tin face down on the pie crust and cut about 3/4" away from edge of pie tin.
Place crust into pie tin and press into the sides.  Crimp the edges of the pie crust (see video)
Sprinkle bottom of pie crusts with tapioca.
In a medium bowl, combine strawberries rhubarb, sugar, lemon juice and nutmeg.
Combine water and cornstarch and stir to mix.  Pour over fruit mixture and stir to incorporate..
Place half of the  fruit mixture into each pie tin.
In a small bowl combine streusel topping ingredients and use clean fingers to combine until it resembles wet sand.
Sprinkle over the top of the pies, adding half to each pie.
Place pies on a cookie sheet and bake for about 20 minutes or until fruit is hot and bubbly and pie crust is golden brown around the edges.
If the pie crust browns too quickly place a piece of foil over the pies.
