Today we are celebrating International Picnic Day and we will show you how to make a Tex-Mex Shrimp Salad Wrap. Summer is all about gathering outdoors with family and friends. This sandwich wrap is very easy with readily available ingredients, convenient for a salad on the go all year round, healthy-ish and light at the same time. It is also the best way to use up all those canned beans and corns we have stocked up during lockdown. This is one of our favorite wraps, we hope you enjoy it as much as we do.

• You can swap out the shrimp for chicken or fried tofu, it will be just as delicious
