Use the Fill Series feature in Excel to quickly fill down consecutive dates BUT exclude the weekends.

In this example, we are using a schedule of subjects that a student needs to attend each day. Students only attend classes on weekdays. We need to complete the dates in the schedule in the most efficient way but exclude the weekends.
