Veg Cutlet Recipe - Dave Signature Recipe
Ingredients:

½ Cup  Paneer Grated
½ Cup  Boiled Red Kidney Beans (Rajma)
¼ Cup  Diced Bell Peppers
¼ Cup  Finely Chopped Cilantro
¼ Cup  Diced Green Beans
¼ Cup  Diced Beet Root
¼ Cup  Diced Cauliflower
¼ Cup  Diced Carrot
¼ Cup  Peas
2 Tbsp  Dried Fenugreek Leaves
1-2 Tbsp Finely Chopped Mint Leaves
1-2 Tsp  Lime Juice
1 Tsp  Ginger Paste
1 Tsp  Chilli Paste
½ Tsp  Red Chilli Powder
½ Tsp  Chhole Masala
½ Tsp  Pav Bhaji Masala
½ Tsp  Chaat Masala
½ Tsp  Cumin Powder
½ Tsp  Black Salt
1 Tsp  Salt
1½ Cups Boiled Diced Potatoes
As Needed Breadcrumbs for binding
As Needed Slurry for coating the cutlet
As Needed Panko Breadcrumbs for crunchiness
1 Cup  Oil (will utilize about ¼ Cup)
2-3 Tbsp Green Yogurt Chutney (Recipe in Chutneys Playlist)
2-3 Tbsp Ketchup

Recipe
Step 1 – Prepare the ingredients. Boil and dice the potatoes. Boil Red Kidney Beans with some salt (or use from a can). Grate the Paneer. Dice and prepare all the veggies. Prepare all the spices, breadcrumbs, and oil.
Step 2 – Steam Bell Peppers, Green Beans, Beet Root, Cauliflower, Carrot, and Peas in a steamer for 10-12 minutes. Take out in a flat container. Add Potatoes and Kidney Beans. Mash everything up together.

Step 3 – Add all other ingredients except Breadcrumbs, Slurry and Oil. Mix it well. Grease hands with oil and roll 28-30 Cutlets. (5-6 Burger Patties)
Step 4 – Dip in Slurry, roll in Panko Breadcrumbs and shallow fry the cutlets. Serve with Green Yogurt Chutney and/or Ketchup.
