For the chicken:
1 1/2 to 2 lbs boneless chicken breasts
Salt and pepper
Water to cover the chicken

For the sauce:
A generous tablespoon of oil (avocado, coconut, safflower -- your choice)
1 large onion, sliced
1 14.5 ounce can diced tomatoes and their juices
2 garlic cloves, smashed (or use 2 teaspoons garlic paste)
1/2 cup chicken stock (from the poached chicken above)
2 chipotle peppers in adobo sauce from a 7 ounce can
2 teaspoons of the sauce from the canned peppers

For building the tostadas:
Crispy corn tortillas (sold as "tostadas")
Sour cream
Sliced raw onion
Thinly-sliced cabbage
Crumbled queso fresco
