The weather is just perfect for kurkure crispy kanda bhaji. So today's recipe is just that.

But to get the perfect crunch 4 things are most important.

1. Slice the onions evenly.
2. Rice flour.
3. Consistency of batter.
4. Temperature and time for frying.

Recipe -

Thinly slice 4 medium onions. Then add salt and rub them properly. Rest them. After 8-10 mins the salt will draw out all the moisture from the onions. This step is important ! WHY ? because this way you can control the exact amount of water needed for the batter at the later stage. If you directly proceed to make the batter then, the onions will release water in the batter and make it too runny. And runny batter = soggy & oily bhajis.

Then add 6Tbsp besan and 6 Tbsp rice flour along with haldi, namak, mirch , dhaniya powder and misal masala. Misal masala really amps up the flavour of the bhajis. You can also add kanda lasun masala or kala masala here.

Then add water, very little at a time and make a thick batter. It should not be too doughy not too runny. To make crispy bhajiyas , dont add a lot of flour. The ratio of flour to onions is quite less to get these perfect crunchy bites !

Heat oil in a kadai , and dunk the bhajis in hot oil. After about 2 mins reduce the heat and fry them at low- medium heat till the bubbles subside and the colour darkens slightly. Fryin on low heat will make them super crispy, If youll fry them at high flame then they will darken but remain soft.

Drain on a kitchen towel and serve HOT with some thecha, fried mirchi, sukhi peanut chutney or even ketchup !
