কী আশ্চর্য এ উপকরণ! কী অদ্ভুত তার মায়া! হাতে নিয়ে নখ দিয়ে একবার চাপ দাও। এক পলকে তা নিয়ে যাবে তোমার ছোটবেলায়। চোখের সামনে ভেসে উঠবে সে হারানো গ্রীষ্মের দুপুরের পাতলা মুসুর ডাল, মায়ের চুড়ির শব্দ, পর্দাটানা ছায়া ছায়া ঘরে কোন ফাঁক দিয়ে ঢুকে আসা তেরছা খর রোদ্দুর। কত কীই তো স্মৃতি হয়ে রয়ে যায়…। সে গন্ধরাজ লেবু তা উসকে দেয় মনের গভীরে। বেলা দে’র রেসিপিতে সে এসে মেশে মুরগির মাংসে। সৃষ্ট হয় নতুন এক মায়াময় পদ, নতুন এক নস্টালজিয়া।
