This easy apricot chicken recipe is a must-try!

Ingredients
8 5 oz. Omaha Steaks Air-Chilled Boneless Skinless Chicken Thighs
1 cup apricot preserves
⅓ cup Dijon mustard
2 tsp soy sauce
1 packet onion soup mix
1 tsp fresh squeezed lemon juice
1 lemon, sliced and seeded
8-10 sprigs of fresh thyme
1 tsp coarse sea salt, or to taste

Directions:
1. Light grill and set up for two zone cooking, establishing the temperature at 375°F. Add one small pecan wood chunk to the charcoal, or a foil packet of pecan wood pellets over top of an active burner on a gas grill.
2. While your grill is preheating, whisk together the apricot preserves, dijon mustard, soy sauce, onion soup mix and lemon juice in a medium-sized saucepan. Place it over medium heat and whisk until the mixture is heated through and well incorporated.
3. Pour half of the warm apricot sauce into a cast-iron skillet. Then, place the chicken thighs on the sauce and pour the remaining sauce over the chicken.
4. Top the sauce with lemon slices and fresh thyme. Then place the pan on the grill over indirect heat. Close the grill’s lid and allow the chicken to smoke until desired internal temperature is reached. About 30 - 35 minutes for the thighs to reach 170°F.
5. Remove the chicken from the grill and season with sea salt for serving. Pair with green beans in butter sauce, or your favorite side.
