1/2-1 tbsp of ground Ceylon cinnamon

Cinnamon Rolls
1/2 cup warm water 90-100F (117 grams)
2 1/4 tsp instant yeast (7 grams)
1 tbsp honey or sugar
1/2 tbsp olive oil
1 1/2 cups all-purpose flour (191 grams)
1/2 tsp fine sea salt

Cinnamon Roll Filling
1/4 cup granulated sugar (50 grams)
2 tbsp brown sugar (25 grams)
1 tbsp cinnamon
1/4 cup unsalted butter room temperature (56 grams)

Glaze
