Ingredients:

1 whole organic  chicken ( I get about 700 g of pure meat)
14 g of salt
pepper to taste

3 eggs (salt with 2 g of salt)
about 170 g bread crumbs (salt with 2 g salt)

frying oil

Preparation

Prepare 1 chicken and remove all clean meat from it together with the skin.
Do not use intestins and other parts of the chicken but only lean meat, clean fat and clean skin.
Grind this in a meat grinder or if you don't have it, chop it into small pieces with a knife. Pay special attention to finely chop the skin and fat in case you do not grind the meat.
From this whole chicken I usually get 700 g of pure meat, ie the mass for chicken nuggets.
Add salt and pepper to the meat.
Depending on the amount of meat you get, the rule is that you should add 20 g of salt and pepper to taste per 1 kg of meat.
In this case I added 14 g of salt to 700 g of meat.
After you have added salt and pepper, mix all together.
Shape the meat into small balls like meatballs.
Arrange the meatballs over the baking paper and place in the freezer for about 15 minutes just to harden a bit.

Prepare 3 eggs and bread crumbs for breading. I usually use 170 g of bread crumbs on this amount of meat, but you need to prepare more because it will be easier for you to cover pieces of chicken in case you have more crumbs in the bowl.
Beat the eggs to get a fine mass.
Add 2 g of salt to both bowls, ie to the bowl with the eggs and to the bowl with the bread crumbs.
Roll the chicken pieces first in bread crumbs, shake them as much as possible and put in the eggs. Using a fork, drain the eggs and put them back in the bread crumbs.
Roll lightly without touching the meat too much.
Place the chicken medallions prepared in this way on a baking paper.
Once you have prepared all the chicken medallions, you can freeze them or fry them immediately.
You can fry chicken medallions in several ways.
I usually fry them in a little oil and over medium heat covered in a pan for about 20 minutes.
If you want to fry them in deep oil, you need to preheat the oil and fry them on medium heat for about 4 minutes.
If you want to bake them in a air fryer do it at 180 degrees C for about 18 minutes.
If you have frozen chicken medallions, you can ( but you dont have to) defrost them before baking.
From this amount of meat, I usually get about 30 pieces of chicken nuggets.
