Mud Pies / Haystacks Recipe - No Bake Cookies

Whether you grew up calling them Mud Pies or Haystacks this is a great no-bake recipe that is quick, easy and everyone loves.

Recipe:

2 cups sugar
1/2 cup butter
1/2 cup milk
6 Tbsp cocoa

Bring to a boil and then boil for approx 30 seconds then remove from heat.
Then add:
1 tsp vanilla extract
3 cups dry quick oats
1 cup coconut

Mix and drop by med scoop or spoon on waxed paper or foil and let cool until they dry to a solid cookie.

These cookies freeze very well.
