Schezwan triple fried rice

Portions serving: 4-5 pax
Preparation time: 20 min
Cooking time: 50 min
Calories: 721 cal per portion

Ingredients:

For boiling noodles:
Water as required
Salt 1 tsp
Oil 1 tbsp
Noodles 1 packet

For boiling rice:
Water as required
Salt 1 tsp
Oil 1 tbsp
Long grain rice soaked 2 cups

Manchurian balls:

Cabbage chopped 1 cup
French beans chopped ½ cup
Carrot chopped ½ cup
Green chilli chopped 1 tbsp
Ginger chopped 1 tbsp
Salt 1 tsp
Black pepper powder ½ tsp
MSG ½ tsp
Soya sauce 1 tsp
Refined flour 3 tbsp
Cornflour 2 tbsp
Oil for deep frying

Manchurian sauce:

Oil 1 tbsp
Garlic chopped 1 tsp
Ginger chopped 1 tsp
Green chilli ½ tsp
Cabbage chopped ½ cup
French beans chopped ¼ cup
Carrot chopped ¼ cup
Vinegar 1 tbsp
Red chilli paste 1 tbsp
Red chilli sauce 1 tbsp
Ketchup 2 tbsp
Soya sauce ½ tbsp
Water as required
Black pepper powder ¼ tsp
Salt ½ tsp
MSG a pinch
Cornflour slurry 2 tbsp
Spring onion chopped 2 tbsp
Coriander chopped 1 tbsp

For fried rice:

Oil 2 tbsp
Garlic chopped 1 tbsp
Dry red chilli 1 tbsp
Capsicum juliennes 1 cup
Carrot juliennes ½ cup
Cabbage shredded ½ cup
Red chilli paste 1 tbsp
Red chilli sauce 1 tbsp
Ketchup 1 tbsp
Soya sauce 1 tsp
Vinegar 1 tsp
Boiled noodles 1 bowl
Boiled rice 1 bowl
Salt 1 tsp
Blackpepper powder ½ tsp
MSG ½ tsp
Spring onion ½ cup
Coriander chopped ½ tbsp

Method:

Boiling Noodles:

1. Heat water in a pan and add salt and a little oil.
2. Once it boils, add noodles and cook until they are almost done.
3. Drain the noodles, drizzle some oil to prevent sticking, and set aside.

Cooking Rice:

1. Heat water in a pan with salt and oil.
2. Add soaked long grain rice and cook until done.
3. Strain excess water, spread rice on a clean surface to cool, and set aside.

Making Manchurian Balls:

1. Mix chopped cabbage, carrot, french beans, green chili, ginger, salt, pepper, MSG, and soya sauce in a bowl.
2. Add refined flour and cornflour to form a dough.
3. Shape the mixture into balls and fry in hot oil until golden brown.

Preparing Manchurian Gravy:

1. Saute garlic, ginger, and green chilli in a pan.
2. Add cabbage, carrots, and french beans, then stir in red chilli paste, red chilli sauce, ketchup, and soya sauce.
3. Season with salt, pepper, and MSG, then add water and bring to a boil.
4. Thicken with cornflour slurry, then garnish with chopped coriander and spring onion.

Preparing Rice and Noodles:

1. In a wok, stir-fry garlic and dry red chilli in oil.
2. Add capsicum, carrot, and cabbage, followed by red chilli paste, red chilli sauce, soya sauce, vinegar, and ketchup.
3. Toss in boiled noodles and rice, season with salt, pepper, and MSG, and stir-fry briefly.
4. Finish with chopped spring onion and coriander.

Assembly:

1. Serve rice and noodles in a bowl, garnished with chopped spring onion.
2. In another bowl, pour the Manchurian gravy, top with fried Manchurian balls, and garnish with spring onion.
3. Triple fried rice is now ready to serve.
