Got these extra thick Berkshire pork chops from Omaha Steaks and gave them the sous vide treatment.

Applied pork rub and put the chops in resealable bags with garlic butter and thyme. Hit the sous vide at 137 degrees for three hours.

After that, got the cast iron skillet ready with avocado oil, garlic, and thyme. Seared pork chops for a minute on each side and rested for 10-15 minutes before slicing.
