Kabsa Chutney

Tomato -2 big
Chilli -3-4
Lemon juice -2tbsp
Salt -
Coriander Leaves - less than handfull

Method

In a chopper add chilli ,tomato ,salt and lemon juice ,pulse it ..
Then add chopped coriander leaves and pulse ,mix everything well ..

Kabsa Masala

Coriander Seeds or powder  -1tbsp
Black Cardamom  -1tbsp
Fennel seeds  or powder -1/2tbsp
Dry Ginger  or Dry ginger powder -1/2tbsp
Black Pepper or pepper powder -1tbsp
Onion Powder -1 tsp (opt)
Cinnamon  or powder - 1 stick  or 1/4 tsp
Cloves -4 or powder -1/4tsp
Bay leaf -1
Turmeric Powder -1/2tbsp

Method
Grind all without roasting




For Kabsa

for Marination
Chicken -1kg
Salt-1tsp
Pepper Powder -1/2tsp
Kashmiri Chilli powder -1/2tsp (opt)
Kabsa Masala - 11/2tsp
Garlic paste -1tsp
LemoN Juice -1tbsp
Water -1tbsp

Rice -2 1/2 cup or 1/2kg

Butter -1tbsp
Oil -2tbsp
Onion -1
Green chilli -3
Garlic chopped -1tbsp
Bay leaf - 1
Dried lemon -2
Salt -
Kabsa Masala -1tbsp
Tomato puree  of 2
Tomato paste -2 to 3tbsp
Water -3cup
Potato -1( opt )
Carrot -

Oil and butter for grilling

Method

Soak rice and strain and keep aside .
Marinate chicken for atleast 1 hour and keep aside ..
Heat oil and butter in a kadai ,add bay leaf dried lemon ,onion ,green chilli,garlic and salt ..saute till transclucent ..
Then add kabsa masala and stir well till the raw smell goes .
Now add tomato puree and paste .. Cook well till the raw smell goes . if the tomato is very sour then decrease the amount of tomato paste ..Our Gravy should me medium sour not too sour .. So adjust  tomato according to the sourness ..
Now add chicken and mix well ..cook for 5 minutes .Then add 3 cups of water and close and cook the chicken till 3/4th done ..
Take chicken out and grill for 5 minutes .
Measure the gravy and pour the gravy to the kadai .we need 11/2 gravy for 1 cup of rice ..
So here we need 33/4 cups of gravu for 21/2 cups of rice ..
To that gravy add potato and carrot ..
Allow to boil ,Then add rice  - mix well. Then place chicken ,close the kadai and cook in low flame till the rice is well cooked .. abt 25 to 30 minutes ..
If u feel the water to be less ,u can add boiled water ..
