⚠️ this recipe yields 2x280-gram country baguettes

• Bread flour (Tradition or T65): 74 gr
• Rye flour (T130 or T170): 34 gr
• Fresh yeast: 1gr
• Water at 20°C: 108 gr
• • • Kneading by hand and let rest 10 h at 22°C
Dough, day 2:
• Bread flour (Tradition or T65): 232 gr
• Salt: 7 gr
• Fresh yeast: 2 gr

• • Kneading at low speed for 4 min and kneading at med-high speed for 6 min
• Bulk fermentation: 30 min at 22°C + 30 min at 4°C
• Dividing: 280 grams portions
• Rest: 10 min
• Shaping
• Final fermentation: 50 min at 23°C
• Dusting flour and scoring
• Baking: 245°C for 16 min + 5 min with the oven door open
• Cooling: on a cooling rack
