■Kitsune Udon■
"Kitsune udon" is a bowl of hot udon noodles topped with fried-tofu ("abura-age") simmered in salty-sweet sauce. Strangely enough, “kitsune” means “fox” in Japanese. It comes from a Japanese myth:

The (white) fox has been believed to be the messenger of the god of harvest ("God Inari"). People offered abura-age to the fox as it was the fox's favorite food. Deriving from this, simmered abura-age has come to be called "kitsune" or "Inari". Inari-zushi, a sushi dish where the sushi rice is stuffed in simmered abura-age, is also common in Japan.

There are more than 30,000 Inari Shrines across Japan with the head shrine in Kyoto. If you have a chance to visit one of them, look around; you'll find fox statues.

■Ingredients of Kitsune Udon■
[Dashi Stock]
2000ml water
20g kombu
60g bonito flakes
※You can keep dashi stock for a couple of days in the fridge, and for a couple of weeks in the freezer.
※This is the traditional way of making dashi stock. You can also use dashi packets or dashi powder which is handier.

[Simmered Abura-age]
5 sheets of abura-age
500ml dashi stock
3 tbsp soy sauce
5 tbsp sugar
※1tbsp=15ml
※I used crystal brown sugar in the video, but you can use regular white sugar.

[Udon Soup /3 servings]
900ml dashi stock
2.5 tbsp soy sauce
2 tbsp mirin
※1tbsp=15ml

[Udon Noodles]
100g per person
※I used "Inaniwa udon" in the video, but you can use any kind of udon.
