INGREDIENTS
1-2 EGGPLANTS
1 GARLIC
PARMESAN CHEESE
BREAD CRUMBS
PARSLEY
SALT PEPPER OIL
1 EGG
MOZZARELLA CHEESE
FRY OIL
Eggplant meatballs recipe
Cut the aubergines into small cubes.
Put them in a pot with the garlic cut in half and a little olive oil.
Cook for 12 minutes on high heat, salt pepper and a spoonful of water.
Crush with a spoon and then add the chopped parsley, 1 egg, 2 spoons of cheese and 2 of bread for each eggplant.
Add more bread until they are a little hard and you can make balls.
Put a piece of mozzarella inside each meatball.
