About Building Restaurant Lunch Catering Business
Previously I said if you want to walk, advertise with discounts, If you want to run, go with “free.” Here’s a third option: if you wanna go warp speed, sampling is your ticket to ride because it gives you leverage beyond the capacity of your dining area. Sampling also allows you to reach 100% of the people you WANT to reach.

People are creatures of habit and if they’re not ordering from you, they’re ordering from someone else. Until YOU upset that habit, it's not going to change. So the problem you’re facing is getting “known.” And the fastest way to do that is with sampling.

Sampling takes your message outside of your four walls and it interrupts people’s habits and gets their attention. Importantly, it also invokes the reciprocity instinct most humans have.  That’s the tendency to “repay” a kindness. You treated them to lunch, so they feel obligated to repay that favor. In this case, they fulfill that obligation by ordering from you in the future.

When we did sampling in my pizzeria, we mostly went after big businesses with a lot of people, like call centers, hospitals, and office complexes. It worked for us, and I suggest you do the same.

Our pizzeria menu was very unique. We had BBQ chicken pizzas, pizzas with artichoke hearts, pesto, Feta, chicken cordon bleu, and even smoked salmon and capers on olive paste. We always included these premium pizzas along with pepperoni, and vegetarian because THAT is what set us apart from all the others. Just dropping off a couple of pepperoni pizzas would NOT make the statement we wanted to make.

To give you an idea of how much effort we put behind this sampling strategy, our goal was to hit 2-3 businesses every day.

If people aren't coming to you, come to them with food and it will net you some great returns, enough to build up a lunch catering business.
