Here is a video showing the location of Knight Lautrec of Carim and some tips for defeating him, if you decide to kill him. If killed he drops the Ring of Favor and Protection, which boost HP, Stamina, and Equip Load by 20%.

For fighting him, I take the safe route of circling at a distance and waiting for him to roll to attack.
