This easy, simple, and delicious recipe is perfect for a cozy meal. Here’s a quick rundown: Ingredients: For Kadhi: 2 cups plain yogurt 2 tablespoons chickpea flour (besan) 1 tablespoon ginger-garlic paste 1 teaspoon turmeric powder 1 teaspoon cumin seeds 1 teaspoon mustard seeds 2 green chilies, slit A pinch of asafoetida (hing) Salt to taste Fresh coriander leaves for garnish For Pakoras: 1 cup chickpea flour (besan) 1 medium onion, finely chopped 1-2 green chilies, finely chopped 1 teaspoon cumin seeds 1 teaspoon ajwain seeds (carom seeds) 1/2 teaspoon turmeric powder 1/2 teaspoon red chili powder Salt to taste Water as needed Oil for frying Instructions: Prepare the Kadhi: In a large bowl, whisk the yogurt until smooth. Add chickpea flour and mix well to combine. In a pot, heat a little oil and add cumin seeds, mustard seeds, and a pinch of asafoetida. Once the seeds start to splutter, add the ginger-garlic paste and green chilies. Sauté for a minute. Pour in the yogurt mixture and bring to a simmer, stirring continuously to avoid curdling. Add turmeric powder, salt, and let it cook on low heat until it thickens slightly. Stir occasionally. Prepare the Pakoras: In a bowl, combine chickpea flour, finely chopped onions, green chilies, cumin seeds, ajwain seeds, turmeric powder, red chili powder, and salt. Add a little water gradually to make a thick batter. Heat oil in a pan for frying. Drop spoonfuls of the batter into the hot oil and fry until golden brown and crisp. Drain on paper towels. Combine Kadhi and Pakoras: Gently add the fried pakoras into the simmering kadhi. Let it cook for another 5-10 minutes so the pakoras soak up the flavors. Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with steamed rice or roti for a comforting meal. This recipe for Kadhi Pakora is perfect for a quick weeknight dinner or a special occasion, offering a delightful blend of creamy curry and crispy fritters in every bite.
