Here's a cauliflower rice recipe that helps you retain the good cholesterol in your body while being super delicious in taste. Not just cholesterol, this recipe for cauliflower rice also uses vegetables like healthy red, yellow and green peppers, that in tandem with Fortune Rice Bran Health oil become a heart-healthy veggie dish!

So, let’s dive into the ingredient list necessary for this cauliflower rice Indian recipe:

1 large cauliflower, cut into florets
1 tbsp olive oil
1½ tbsp finely chopped garlic
3-4 finely chopped spring onion bulbs
7-8 french beans, finely chopped
1 medium carrot, finely chopped
¼ small red capsicum, finely chopped
¼ yellow capsicum, finely chopped
½ tbsp soy sauce
Crushed black peppercorns to taste
Salt to taste
3 tbsp vegetable stock
3 tsp vinegar
2-3 spring onion greens, finely chopped
Sliced spring onion greens for garnish

1. In a food processor, add cauliflower florets and coarsely process it. Set aside.
2. Heat Fortune Rice Bran Health oil in a non-stick wok, add finely chopped garlic, and sauté well. Add spring onion bulbs and sauté till translucent. Note, that we can use olive oil as well as Fortune’s rice bran oil for sauteing onions as they are both healthy, but the rice bran oil generally adds the much-needed flavour that outlines this cauliflower rice Indian recipe.
3. Add freshly chopped French beans, carrot, and sauté well. Cook for 1-2 minutes.
4. Add red capsicum and yellow capsicum after chopping them finely and sauté the ingredients well. Cook for 2-3 minutes.
5. Add the cauliflower, soy sauce, crushed black peppercorns, salt, and toss well.
6. Add vegetable stock and mix well. This vegetable stock mixes seamlessly with the cauliflower rice recipe ingredients and prevents the loss of important nutrients that get washed off otherwise. Cover the wok and cook for 2-3 minutes.
7. Add vinegar and mix well. Add chopped spring onion greens, toss well and take it off the heat.
