HOMEMADE EGG PIE RECIPE

INGREDIENTS:
PIE CRUST:(for a 9inch pie pan,bottom only)
1 1/4 cup flour(all purpose flour or ordinary flour will do)
1 stick butter(1/2 cup)- should be cold/chilled)
1 tsp granulated sugar
pinch of salt
3-4 tbsp iced water
EGG FILLING:
4 large egg- separate 1 egg white to use later on
1 can evaporated milk
1 can condensed milk
1 tbsp. cornstarch(optional)
1 tbsp. vanilla extract
1 tsp. lemon juice(optional)
EGG WASH:
1 Small egg
*egg wash is opional
*lemon rind is also good to add together with the lemon juice but this is optional.
PROCEDURE:
1.Roll dough according to your pan size, lay on the pan. Chill while we make the filling.
2.Beat lightly 3 whole eggs and 1 yolk, Mix in evaporated milk and condensed milk, add vanilla extract and lemon juice. Add cornstarch (this is a binding agent). Set aside.
3.Beat 1 egg white until soft peaks forms(egg whites makes the top of the pie brown).
4.Strain the egg mixture to achieve a silky smooth pie filling, then add the egg whites and lightly whisk, about 15 seconds, dont overmix.
5.Pour the filling into the pie crust/pan, Brush edges with egg.
6. Bake in Pre-heated oven for 15 minutes at 350F.
7.Reduce temperature to 325F and continue baking for 45 minutes or more depending on the type of oven you use.
8.Top should be a little jiggly, Let it cool completely before serving.
