My simple and easy to follow blueberry cheese cupcake recipe. (see complete ingredients below).
BLUEBERRY CHEESE CUPCAKE RECIPE INGREDIENTS:
Crumbs:
3/4cup crushed graham
1tsp granulated sugar
3tbsp melted butter
Cream Cheese Mixture:
1 block cream cheese (8oz)
1/3 cup granulated sugar
2pcs eggs
1tsp vanilla flavor
1tsp cornstarch
blueberry toppings
BLUEBERRY CHEESE CUPCAKE RECIPE COOKING PROCEDURES:
Prepare 3/4 cup crushed graham.
Then mix it with 1tsp white sugar.
Then add 3tbsp melted butter and mix thoroughly.
Then lay down cupcake liner on a cupcake baking tray.
Scoop 1/2tbsp crumbs mixture on each cupcake liner.
Press and flatten the crumbs at the bottom of the cupcake liner evenly and set aside.
Prepare the cream cheese mixture.
Beat cream 1 block (8oz) cream cheese and 1/3 cup sugar until smooth (no lump at all).
Then add 2 eggs (1 egg at a time).
Add 1tsp cornstarch and 1 tsp vanilla and mix.
Scoop 1tbsp of the cream cheese mixture and pour it on top of the flattened crumbs.
Preheat oven for 10-15 mins at 150°C
Bake the cheese cupcake for 15-20 mins.
Then, let it cool down first in a cooling tray and refrigerate for about 4hours.
Lastly, add the blueberry toppings (about 1tsp each cupcake).
It's ready to be served! Enjoy!
