Homemade Lemon curd low carb recipe / gluten free / no added sugar

lemon curd is something i think tastes good by itself (sweet tooth fix), but this keto lemon curd is also delicious as a spread for low carb toast, pies, pastry or even low carb sponge cake. I have even given as gift to friends that are not keto / low carb

this recipe will make around  12 portions
you will need:

120g - 1/2 cup Unsalted Butter
90g - 3/4 cup Erythritol powdered https://amzn.to/2PiZa5e​
120g - 1/2 cup Fresh Lemon juice (about 5)
grated zest of 1 lemon ( or more to taste)
6 egg yolks

whisk or fork

tips:
1. melt butter on low heat (do not brown)
2. take off heat and add lemon stir, then sweetener and stir, then egg yolk
3. low heat whisk until thick like custard
4. use air tight jars and store in fridge
5.  if starts to crystallise in fridge just gently reheat and mix

makes 12 portions
1 portion  = 2 x Tbsp
