I spent the afternoon processing
I spent the afternoon processing close to a bushel of San Marzano and Roma tomatoes into tomato sauce. I used our Vitamix and puréed the tomatoes-- skin, seeds and all. I then cooked the purée down to a thickened sauce and water bath canned all of it, adding just 1/4 tsp of salt per jar as a basic seasoning. We'll add some herbs later, when we use it. This batch of tomatoes yielded 14 pints of sauce.
