Carnitas cooked on El Disco!! Carnita Tacos

We finally made Carnitas! And we cooked them on the Disco.  We had a great time cooking these, and they came out spectacular!
We broke some unwritten "rules" in making these, and they still came out great. It's simple, sear them, then slow cook them until cooked through.  
You can see we didn't cover all the meat with grease and you can see that the meat was cut in different sizes.  Just give it a try and enjoy the process. #carnitas
