Ingredients:
1200 g pork
1 liter of cold water
25 g sea salt
25 g nitrite salt

4 cloves of garlic
3 bay leaves
Peppercorns
3 allspice
1 tablespoon marjoram
Put the meat in the brine
Cover and marinate for 3-4 days
During this time, turn the meat 3-4 times

For cooking:
2 liters of cold water
1 tablespoon of salt
1 tablespoon marjoram
2 allspice
3 bay leaves

When the water reaches 90 degrees, put the meat in it.
Bring the water temperature to 82-85 degrees and reduce the heat.
The meat should be cooked at a temperature of 82-85 degrees.
The temperature in the ham should be 75 degrees.
Cooking time - 1 hour 45 minutes (in my case).
Let it cool down quickly in cold water (baking bag, waterproof packaging).
Store in the refrigerator for a few hours.
