Mutton Pulav Andra Style
INGREDIENTS:
Oil    - As required
Cinnamon stick  - 3 nos.
Green cardamom  - 2 nos.
Star anise   - 1 no.
Cloves   - 6 nos.
Bay leaf   - 1 no.
Black cardamom - 2 nos.
Onions   - 2 nos.
Turmeric powder - ½ tsp
Ginger garlic paste - 1 tsp
Mutton   -  500 gms
Water   - As required
Poppy seeds  - 50 gms
Coconut  - 1 no.
Shahi jeera  - 1 tsp
Curry leaves  - 1 spring
Cashew nut   - 10 nos.
Potato (pieces) - 500 gms
Green chillies  - 5 nos.
Coriander leaves - 1 bunch
Basmati rice (soaked) - 1 cup
DIRECTIONS:
Heat oil in a pan, cinnamon stick, green cardamom, star anise, cloves, bay leaf, black cardamom, onions, turmeric powder, ginger garlic paste saute it and untill all the raw flavour is gone.
Now, add mutton pieces, water cook it for 20-25 minutes.
Heat in another pan, add poppy seeds, pepper dry roast it and transfer into a blender, add coconut grind into a fine paste.
Heat oil in a pan, add shahi jeera, curry leaves, coconut paste, chilli powder, cashew nut mix it well and add potato pieces, boiled mutton, green chillies, coriander leaves and add soaked basmati rice mix it well cook into for 10 minutes on slow flame close the lid. Then switch off the flame.
Delicious Mutton Pulav Andra Style ready to serve.

Modern and chicken recipes are very popular in on the style cooking and the use of curry leaves in most of the meat preparation is often seen and some of the differences in cooking style of mughlai and in the Hindu cooking can be seen with the masalas and the cooking methods, in the Hyderabad instead of cooking dum method is often used which is slow cooking and one pot process is often used. The use of coconut tomato and other masala is can be seen in the Hindu style of cooking even though the difference is is now very little seen most of the food of traditional cooking is changing due to the television and Internet access to various methods of cooking. But some of the traditional cooking and experimentation has improved with the combination of Hindu and Muslim cooking.
