I always have a bag of walnuts at home. I really like them as a healthy and tasty snack between meals. They have a very high value of healthy fats, vitamins and can even protect against cardiovascular diseases and lower blood lipid levels. But since they are very high in fat, a handful a day will suffice. But why not bake a delicious walnut bread? Any variation of cheese is a wonderful topping. But I also like it for breakfast with jam 😋

The recipe is for 2 walnut loaves
Preheat the oven to 240° top/bottom heat

500 g wheat flour type 550
50 - 100 g walnut kernels (depending on how nutty you want your bread to taste)
2 tablespoons very good olive oil
21 g fresh yeast (half a cube)
300 - 325 ml lukewarm water
12 grams of salt

Dissolve the yeast in the lukewarm water and leave to stand for approx. 15 minutes. Chop the walnut kernels into medium to small pieces.
Put the flour, the yeast water, the walnuts, olive oil and salt in a baking bowl and knead on a medium speed until a homogeneous dough has formed. Cover the bowl with cling film or a clean kitchen towel. Leave at room temperature for 2 hours
Sprinkle a baking board with flour and briefly knead the dough again with your hands. Using a pastry card, cut the dough in half. Using your hands, shape the dough into two equal strands and place them on a baking sheet lined with parchment paper. You can also simply twist (devour) the strands of dough 3-4 times. This looks very pretty and rustic. Now let the dough pieces rise for about 30 minutes, covered with a clean, damp kitchen towel. The dough doubles in volume again
Now put the tray in the preheated oven on the middle shelf and bake at 240° Celsius for 25 to 30 minutes. Bake with steam for the first 10 minutes!

If you have a bread baking stone, it will be heated up in the oven for 1 hour. You then place the baguette tray on the bread baking stone
