This vegetables coconut soup is aromatic, delicious and very healthy. It is a great soup, especially for the coming cold season as an appetizer or even a meal. This version is vegan, but you can add chicken, tofu or shrimp. Ingredients: • 1/2 yellow onion • 1/2 bell pepper • 3-4 tomatoes • 2 green onion • 4-5 cloves of garlic • 1 tbsp ginger • 1/2 cup shredded carrots • 1/2 cup broccoli florets • 2 tbsp coconut oil • 1 tbsp lemongrass paste or curry paste • 2 cups water • 1 cup full fat coconut cream • 1 tbsp honey • 2 tbsp lemon juice • 1 tbsp chili paste • fresh cilantro Directions: • chop all the vegetables finely. • heat coconut oil and sauté onion for 2-3 minutes until softened. • add ginger and garlic and sauté for a couple more minutes. • add the paste and combine well with the onion mixture. Add water and let it boil. • once the water is boiled, you can add the veggies or strain out the mixture if you don’t like to have onion or garlic pieces in your soup. This didn’t bother me, so I didn’t strain. • add the chopped veggies and let the soup simmer for 10-15 minutes or until the veggies are cooked. • add salt, lemon juice and transfer to your serving dish. Garnish with fresh cilantro and serve hot. Enjoy! #souprecipe #coconut #vegan #healthyrecipes
