Today Melanie makes the best creamy keto popsicles. These homemade popsicles are super easy and only take a few ingredients. What’s best is they can be made into so many different flavors.

ingredients:
- 1 can full fat coconut milk
- 90 g monkfruit (or other sweetener of choice)
- 1/4 teaspoon xanthan gum
- 1 pint heavy whipping cream
- 1 tbsp vanilla

flavors of your choice, this is what i did:
- almond extract & pistachio
- coconut extract & coconut flakes

directions:
In a small saucepan on medium to low heat, combine 1 can full-fat coconut milk, 1 tbsp vanilla, and 90 g monkfruit (or other sweetener of choice) just until sweetener is dissolved. Sprinkle 1/4 teaspoon xanthan gum over the top and whisk in. Use an immersion blender to break up any remaining clumps or strain. Place this mixture in a bowl covered with saran wrap in the fridge and allow it to cool completely. Once that is cooled, beat 1 pint heavy whipping cream until soft peaks form, add 1-2 teaspoons of vanilla, and then fold in your cooled coconut mixture. Next, add your flavors. If you are doing multiple, separate out into two (or more) bowls and then add. Spoon in the complete mixture into your popsicle molds, being careful not to overfill. Place in your freezer until firm. Enjoy!
