Grilled Choripan Sandwich: Argentine Chorizo Sausage with Homemade Chimichurri Sauce

This sandwich brings back old memories from my times in Argentina. After a night of dancing, we'd leave the clubs and vendors would set up their grilling stations upwind and the delicious aroma would strike you in the face as soon as you'd step outside. Guys would pay, then take off their jackets and place them in their girlfriends' lap to protect their beautiful dresses from dripping chimichurri sauce, as they sit on the curb eating their sandwich. So I dedicate this sandwich to fond, unforgettable memories!
