Lohikeitto
For 6 servings:
1 kg of potatoes
1 onion
2 large carrots
1 liter of water
10 allspice peas
5 white peppercorns
1-2 bay leaves
1 kg diced salmon
300 ml cream
25-50 gr butter
A pinch of salt
1 bunch of dill
Peel potatoes and cut into suitable pieces
Peel and chop the onion.
Peel the carrots and cut into small cubes
Add allspice, white pepper and bay leaf
Then add the chopped potatoes, onions and carrots.
The broth is cooked over low heat under a lid almost until tender.
Then add the salmon cubes and cream
The soup is cooked over low heat until the fish is cooked.
The soup is taste tested and served with fresh dill.
