Geddit? Ahhhhhh.
So back at Ginstock again, this time with something a little less salacious and a little less carnivorous.
This one is for my veggie posse out there - a Halloumi burger made with delicious leftovers!

FULL RECIPE
Ingredients
For the cranberry and chilli sauce
175ml white wine
4 tbsps golden caster sugar
2 long red chillies
150g fresh cranberries

For the burgers
375g halloumi (1½ blocks)
2 spring onions, finely chopped
3 brussel sprouts, finely chopped
1½ banana shallots, finely chopped
Handful of dried cranberries, chopped
Handful of sundried tomatoes, drained and roughly diced
1 egg, beaten
Handful of breadcrumbs
2 tsps chopped garlic
1 tsp dried chillies

To serve
1 ciabatta loaf
2 tbsps. sunflower oil
Thinly sliced beef tomato
Watercress and rocket

Method
Pour the wine into a saucepan with the sugar and set over a medium heat. Remove the stalks from the chillies, and slice them in half lengthways. Add to the wine and sugar mixture with the cranberries, and leave to simmer.

Grate or finely slice the halloumi into a bowl. Add the rest of the burger ingredients, reserving the dried chillies, with a small pinch of salt (halloumi can be salty) and freshly ground black pepper to season. Stir well to create an even mixture. Decant into a food processor and blitz until fine and beginning to come together. Finally, add the dried chillies and stir through. Using your hands, form into burger patties and set aside. If possible, cover and refrigerate for half an hour.

Check on the sauce – it should have reduced to a jammy consistency. Remove from the heat.

Heat a griddle pan over a medium heat. Slice the ciabatta in half lengthways and drizzle the cut side with vegetable oil. Top and tail the ciabatta to remove the rounded ends, and slice in half again to create two ciabatta burger buns. Place cut side down in the pan to toast, removing when golden and with visible score marks.

In a frying pan, heat the sunflower oil over a medium heat until bubbling. Add the burgers to the pan. Cook until dark golden brown on each side. Remove from the pan and sandwich between the ciabatta rolls with some tomato slices, a dollop of cranberry and chilli sauce, and some watercress and rocket.
