മലബാറുകാർക്ക് ബിരിയാണി എങ്ങനെയാണോ അതുപോലെയാണ് ജോർദാനുകാർക്ക് മൻസാഫ്.ജോർദാനിയുടെ ദേശിയ ഭക്ഷണമാണ് മൻസാഫ് .
ജമീദ്, അതായത് ഫെർമെന്റ് ചെയ്ത് ഉണക്കിയ തൈരിന്റെ സോസിൽ ഇളം ആടിനെ വേവിക്കുന്നതാണ് പാചക രീതി. ചോറിന്റെ കൂടെയാണ് മൻസാഫ് വിളമ്പുന്നത്. ജോർദാന്റെ തനി രുചിയിലുള്ള മൻസാഫ് വളരെ എളുപ്പത്തിലും അതേ സ്വാദോടെ കൂടി വീട്ടിൽ തയാറാക്കാം.മട്ടൻ മൻസഫിന്റെ രുചിക്കൂട്ടെങ്ങനെയെന്നു നോക്കാം.ഒരുകാര്യം ആദ്യമേ പറയാം. തീർത്തും പശ്ചിമേഷ്യൻ രുചിയാണിത്. നാട്ടിലെ ബിരിയാണിയുടെ മസാലപോലെയാണ് ഇത് എന്ന് കരുതരുത്. രുചിപ്പെരുമയുടെ മട്ടണ്‍ മൻസാഫ് , തനതു അറേബ്യൻ രുചിയിൽ:
