Betty demonstrates how to make Queso Blanco Dip. This is a dip similar to the one shown on the trip to Coba Cocina restaurant in Lexington, Kentucky. Great for a different dip at your next Mexican-themed get-together!
Mexican Queso Blanco Dip
1 tablespoon olive oil
¼ small onion, diced
1 fresh jalapeno pepper, seeds and fibers removed
12 ounces American white cheese, shredded
4 ounces Monterey Jack cheese, shredded
½ cup milk
1 medium tomato, peeled, seeded, and diced
1 handful fresh cilantro, chopped
restaurant-style tortilla chips
In a skillet, heat 1 tablespoon olive oil over low to medium heat. Add ¼ small onion, diced and 1 fresh jalapeno pepper, diced. Saute over low to medium heat until softened. Add 12 ounces American white cheese, shredded, 4 ounces Monterey Jack cheese, shredded, and ¼ cup milk. Stir until melted. (If needed, return to low heat to complete the melting process.) Add 1 medium tomato, peeled, seeded, and diced, 1 handful fresh cilantro, chopped, and the remaining ¼ cup milk. Stir until dip reaches desired consistency. (Return to stove over low heat, if needed to complete the melting of the cheese.) Pour into a bowl and serve with restaurant-style tortilla chips. This dip tastes fantastic!
