INGREDIENTS:
For Batter:
* Gram Flour(बेसन) - 1 Big bowl
* Turmeric Powder(हल्दी पाउडर) - Some
* Red Chili Powder(लाल मिर्च पाउडर) - Some
* Salt(नमक) - As per taste
* Asafoetida(हींग) - Some
* Water(पानी) - As required
* Carom Seeds(अजवाइन) - Some
* Coriander Leaves(धनिया पत्ती)
* Baking Soda(बेकिंग/मीठा सोडा) - 1 Pinch

For Filling:
* Oil(तेल) - 2 Tsp
* Dried Coriander Seeds(सूखा साबुत धनिया) - 1 Tsp
* Fennel Seeds(सौंफ) - 1 Tsp
* Curry Leaves(कढ़ी पत्ता) - Some
* Green Chillies(हरी मिर्च) - Some
* Coriander Powder(धनिया पाउडर) - 1 Tsp
* Roasted Cumin Powder(भुना जीरा पाउडर) - 1 Tsp
* Turmeric Powder(हल्दी पाउडर)
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर)
* Asafoetida(हींग)
* Water(पानी)
* Potato(आलू) - 4-5 Boiled & Grated
* Sugar Powder(चीनी पाउडर) - 1 Tsp
* Salt(नमक) - 1 Tsp
* Citric Acid(साइट्रिक एसिड) - Some
* Coriander Leaves(धनिया पत्ती)
* Big Green Chilli(बड़ी हरी मिर्च)
* Tomatoes(टमाटर) - 3-4
* Oil(तलने के लिए तेल) - For frying

For Chutney:
* Coriander Leaves(धनिया पत्ती)
* Mint Leaves(पुदीना पत्ती)
* Curry Leaves(कढ़ी पत्ता) - Some
* Green Chilli(हरी मिर्च)
* Ginger(अदरक)
* Roasted Cumin Powder(भुना जीरा पाउडर)
* Salt(नमक) - As per taste
* Coriander Powder(धनिया पाउडर)
* Dried Mango Powder(अमचूर पाउडर)
* Water(पानी) - 1-2 Tsp

RECIPE
For Chutney,  in a mixer jar, put Coriander Leaves, Mint Leaves, Curry Leaves, Green Chilli, Ginger, Roasted Cumin Powder, Salt, Coriander Powder, Dried Mango Powder, Water and grind it and take it out in a bowl.
For Batter, in a bowl, put Gram Flour, Turmeric Powder, Red Chilli Powder, Salt, Asafoetida, Water and beat the batter in one direction. Then make a perfect batter using fingers, cover it and keep it for 15-20 minutes. Then put Carom Seeds, Coriander Leaves, Baking Soda, some Water and mix it well.
For Filling, Keep the pan on the flame, put some Oil, Dried Coriander Seeds, Fennel Seeds, Curry Leaves, roughly Green Chillies, Coriander Powder, Roasted Cumin Powder, Turmeric Powder, Kashmiri Red Chili Powder, Asafoetida, Water, boiled & grated Potato, some Sugar Powder, Salt, Citric Acid mix it well and cook it. Put Coriander Leaves and keep the filling for cooling down.
For Pakoda, take Big Green Chillies and slit them like this keeping them join on the other side in a center and remove the seeds from the chilies, then fill the stuffing in it. Then take sliced Tomatoes, put the filling upper side and put dry Green Chutney on the lower side. Sprinkle some Gram Flour on it and coat it with the batter. Then take stuffed chili, coat it with the batter and let the extra batter drip off. Deep fry the stuffed Chili and Stuffed Tomatoes until they get golden brown from all the sides. Likewise, fry all the pakoras. Serve and enjoy the Tasty Stuffed Pakodas with Sauce or Chutney or Tea. In this way, Surat Style Tasty and Crispy Tomato Pakoda, Mirchi Pakora/Vada will get ready at home.
