Take your basic alfredo sauce to the next level with a few extra ingredients turning it into Cajun Chicken Alfredo with tangy Sun-Dried Tomatoes.  Yum!  It's an easy dinner with chicken and pasta...an easy alfredo sauce elevated to cajun chicken pasta.  Join me In Renee's Kitchen and I'll show you how to make this quick pasta recipe.

CAJUN CHICKEN ALFREDO RECIPE

cajun seasoning 1 Tbs kosher salt, 1Tbs paprika, 1/2 Tbs black pepper, 1/2 Tbs garlic powder, 1 tsp onion powder, 1/2 tsp cayenne.  Mix together and set aside.

4 boneless, skinless chicken breast
2 cloves mined garlic
1/4 cup dry white wine
2 cups heavy whipping cream
3-4 sections of sun-dried tomatoes roughly chopped
1/4 cup grated parmesan cheese

Preheat oven to 375 degrees.  Bring a large pot of salted water to a boil.  Heat a skillet over medium heat.

Liberally sprinkle chicken breasts on both sides with cajun seasoning.  Add 1 Tbs olive oil to warm skillet.  Saute both sides of chicken, 2-3 minutes per side.  Transfer the chicken to a baking sheet and place oven for 10 minutes.  Remove from oven and let rest for 10 minutes.  Slice chicken thinly on the diagonal.

In the same skillet over medium heat, heat 1 Tbs olive oil.  Add garlic and lightly brown for about one minute.  Stir in the wine.  Pour in heavy cream, bring to a low simmer, and cook until sauce is reduced by half.  Add the sun-dried tomatoes.

Meanwhile, cook the fettuccine according to package directions.  Drain.

When sauce has thickened and reduced, stir in 1/4 cup of parmesan cheese and half of the sliced chicken.  Stir well.

To serve, toss the pasta with the sauce and serve in a large pasta bowl.  Garnish with thinly sliced green onion and remaining parmesan cheese if desired.  Top with more chicken.
